
Raw Cottage Cheese with Tomatoes and Olives. (2 servings) Preparing time: 15min (+soaking time)
What you’ll need for this recipe:
Blender,
Drainer
Mixing bowl
300g Cashew nuts
½ lemon
3 garlic cloves
Sea salt
2 large tomatoes
1 medium onion
150g olives
Dills (fresh or dried for flavouring)
Preparing:
Soak cashews for min. 4 hours (it’s best to leave them soak overnight).
Drain them, wash with running water, add ½ lemon, 3 garlic cloves sea salt, little water and blend it:
that will be your “cottage cheese”.

Then cut tomatoes, chop onion put them in mixing bowl, add olives and “cottage cheese” and stir it.

Add sea salt if necessary.
For extra tasty flavor add dried or fresh dills.
